Rice Pudding With a Difference!

Today I decided to try out another recipe my friend in the US gave me.
It is called Rice Pudding, but is nothing like our UK rice pudding.
For starters, long grain rice is used, where as we use short grain ( generally sold as "pudding" rice)
The recipe was actually for large catering portions, so I had a bit of fiddling to do with the quantities...seeing as we only wanted enough for five!
I cooked a cup of rice, that makes about 3 cups cooked.
It was layered with enough raisins to make a good covering.
Eggs, sugar and milk are beaten together and then nutmeg and cinnamon added...was supposed to add vanilla but I have run out!
The milk mixture is poured over the rice and then some cinnamon sugar liberally sprinkled over the top...
...then baked for around 50mins in a moderate oven.
I guess its rather like an egg custard bake, with rice!

It comes out in "slices" rather than spoonfuls and is served with a butterscotch sauce, made with brown sugar, butter and cream ( except I didn't have cream so used milk and it worked out fine!)
Vanilla ice cream went well with it, and then the hot sauce on top.
Whilst it was very different to our UK rice pudding it was very nice and everyone enjoyed it...Teen Two had two helpings!
Whilst the oven was on I decided to make a quick cake for tea time.
Using the basic Victoria Sandwich recipe, I added plenty of ground ginger, then when the cake was cooked and cooled....
...sandwiched it together with the Ginger Curd I had bought from English Heritage.
It went down a treat at tea time.
The rest of the day was fairly usual, church, roast beef dinner, Scrabble with Grandma ( she won) and church again.
Oh... we did have a flying visit from next door...he brought a gold necklace and small cameo ring for Teen One as a memory of his late mum...he is so thoughtful.
Tomorrow sees the start of GCSE's for Teen Two and A Levels for Teen One....they will be looking forward to the half term break coming up!
